Crops from your garden in this recipe: 🫐 Blackcurrant

Ingredients

Green items are crops you can grow yourself.

Method

  1. Put the blackcurrants in a pan with 500 ml water and simmer for 15 minutes until they have burst and the juice is deep purple.
  2. Strain through a muslin-lined sieve, pressing gently, and measure the juice.
  3. Return to the pan with 300 g sugar for every 500 ml of juice, plus the lemon juice, and heat gently until the sugar dissolves.
  4. Simmer for 2 minutes, skim and pour into sterilised bottles.
  5. Dilute about 1 part cordial to 5 parts water, or use in hot drinks or over ice cream. Keeps in the fridge for 4 weeks, or freeze in tubs for longer.
