Ingredients
- 2 tbsp Calendula petals, fresh or dried (grown in the garden)
- 1 Onion, finely chopped (grown in the garden)
- 300 g Basmati rice
- 20 g Butter
- 600 ml Vegetable stock
- 1/2 tsp Salt
Green items are crops you can grow yourself.
Method
- Rinse the rice until the water runs clear.
- Melt the butter and soften the onion for 5 minutes.
- Add the rice and most of the calendula petals and stir for 1 minute, then add the stock and salt.
- Cover and simmer very gently for 12 minutes, then rest off the heat for 5 minutes.
- Fluff with a fork and scatter over the remaining petals. Calendula gives a golden colour and a mild, peppery flavour, a traditional cheaper substitute for saffron.
