- small handful Borage flowers (grown in the garden)
- small handful Viola or pansy flowers (grown in the garden)
- 3 tbsp Olive oil
- 1 tbsp Lemon juice
- pinch Flaky salt
Green items are crops you can grow yourself.
Method
- Wash the lamb's lettuce and dry it thoroughly.
- Shake the flowers gently to dislodge any insects, but do not wash them as they bruise easily.
- Whisk the oil, lemon juice and salt.
- Toss the lamb's lettuce lightly in the dressing and pile onto plates.
- Scatter the flowers over the top at the last minute. Nasturtium flowers taste peppery, borage tastes of cucumber and violas are mild and sweet.
