1 hr 30 min · makes 3 small jars
Crops from your garden in this recipe: 🍒 Redcurrant⚪ Whitecurrant
Ingredients
- 1 kg Redcurrants, on their stalks (grown in the garden)
- 200 g Whitecurrants (optional) (grown in the garden)
- about 600 g Granulated or preserving sugar
Green items are crops you can grow yourself.
Method
- Put the currants in a large pan with 200 ml water and simmer gently for 20 minutes until they are completely soft.
- Strain through a jelly bag or muslin-lined sieve over a bowl for several hours, without squeezing, so the jelly stays clear.
- Measure the juice and add 450 g sugar for every 600 ml.
- Warm gently to dissolve the sugar, then boil hard for about 8–10 minutes until it reaches setting point (a drop wrinkles on a cold saucer).
- Skim off any scum, pour into sterilised jars and seal. Lovely with lamb, game or cheese.
